Do you always leave your plantain to overripe even when you don’t like them that way? Or, maybe they get overripe before you are even back from the market. Lol. Worry no more because the following steps will give you a fresh and yummy way to prepare and savour that overripe plantain of yours. With the addition of a few ingredients, you will get that overripe plantain transformed into a yummy meal.
• Overripe Plantain (3 or more fingers)
• Liquid Milk
• Fresh Pepper (Chopped)
• Onion bulb (Chopped)
• Fresh Egg
• Melted Butter
• Water (Optional)
Unwrap your plantain, slice into little cubes. Pour into a blender; blend till it turns into smooth batter.
Add the chopped pepper and onion into the blender. Add your egg and milk and blend properly. Sprinkle some sugar and salt into your flour. Pour your properly blended plantain batter into a bowl, pour flour into your plantain puree then turn mixture properly. Add more milk if it is too thick.
Grease your frying pan with little oil. Pour your batter into the pan; allow it sit for few seconds, flip over then take it out when both sides are done. Fry with on the lowest heat.
