How to make the King of Street Foods

 You too can have a taste of Port Harcourt anywhere you are on the globe by trying out our recipe for the king of street food, Pitakwa, Boli and Roast Fish.

 

Ingredients

  • one whole tilapia(cleaned and gutted)
  • One medium sized ripe plantain
  • one medium habanero pepper? Ata-rodo
  • one small red bell pepper or tatase
  • one small onion cut into two chuncks
  • One small garlic clove(optional)
  • one finger of red cayenne or chili pepper
  • one finger of green cayenne or chili pepper
  • 1plum tomatoes
  • salt to taste
  • Half of one whole knorr cube or a small bouillon
  • 1tbsp grinded crayfish or shrimp paste
  • 1½-2tbsps of cooking oil(for cooking)
  • ½tbsp olive oil for tomato puree
  • Fresh Utazi leaves

For pickled onion

  • one really small onion or shallots
  • one small finger of cayenne pepper or habanero pepper(if you can stand the heat)
  • a pinch of salt
  • 1tsp of vinegar

Instructions

  1. wash and pat fish dry, score the sides with a sharp knife and set aside
  2. blend all your chilies and peppers, the Knorr cube, ½tbsp of oil and one of the onion chunks.
  3. pour out half of it then add the tomatoes to the remaining half in the blender and puree
  4. season the fish with salt; then using some of the puree you poured out of the blender, give the fish a nice rub making sure you get into the nooks and crannies of the fish
  5. Sit the fish in the refrigerator for an hour or more to marinate.
  6. Slice up the onion along with some chilies. Season with salt and vinegar and let it sit in the refrigerator to pickle until the food is ready
  7. Pre heat your oven to 350degrees
  8. Peel your plantain, by cutting through the skin with a knife. Score the sides of the plantain and sit it in a foil wrapper or non stick oven tray and spray with some oil(optional). Put the plantain into the oven and let it roast
  9. Remove the fish from the refrigerator and heat up a non stick pan(you may also spray the pan with some oil this is optional depending on you and your pan mostly). Carefully sear the fish on both sides and transfer into non stick oven tray or roasting pan(you may even sear it on a griddle or pan that is heat resistant and can go into the oven). But before you transfer the fish into the oven, use the remaining of the puree that you poured out or the blender and marinate the fish again; then into the oven it goes to roast alongside the plantain
  10. Once the plantain is nicely browned, remove it from the oven and let it cool before cutting it up(You want your plantain to be nicely browned and a little moist on the inside, No one wants a dry looking or tasting plantain
  11. While the fish is cooking, heat up 1½- 2tbsps of oil in a sauce pan, slice and throw in the other half of the onion and the garlic clove. Sauté for two minutes; then add the grinded crayfish or shrimp paste and sauté for another minute, making sure it does not burn(use medium to low heat for this process). Pour in the tomato and chili puree and let it cook. Check for seasonings and add salt if needed. Once the oil floats to the top and the stew looks a bit darker; then it is done
  12. Check on the fish, once it is done, quickly brush on some of the stew on it and let it sit and soak up the tomatoes. Cut the plantains into whatever sizes that you would prefer, pour some stew over it and toss. Serve with the picked onion and pepper mix
  13. Wash Fresh Utazi Leaves and dice into small strips to garnish with Sliced Onions.

We are in the season of conjunctivitis popularly known as Apollo, in order not to be a victim, I bring to you practical ways, which you can prevent Apollo.

Conjunctivitis is the redness (inflammation) of the transparent membrane covering the white of the eyes (conjunctiva) cause by infections (which may be bacterial or viral), allergies (to substance such as pollen) or irritants (such as smoke or certain chemicals).

It may affect one or both eyes and it can spread easily from one eye to the other.

SYMPTOMS OF CONJUNCTIVITIS INCLUDE:

  • Redness and/or itchiness of the eyes

  • Contact dermatoconjunctivitis, from eye drops, environmental allergens are suggested by symptoms which vary with seasonality, time of day, geography and nature of landscape (e.g., rural, urban, oceanic), chemicals or make-up
  • Giant papillary conjunctivitis, from wearing contact lenses, eye surgery stitches or tubes or things fitted during eye operations.

SPREAD OF CONJUNCTIVITIS CAN BE PREVENTED BY THE PRACTICE OF GOOD HYGIENE WHICH INCLUDES:

  • Regular hand washing
  • Use of clean towels
  • Avoiding sharing of towels
  • Avoiding the sharing of eye cosmetics
  • Avoiding touching your eyes.

CONJUNCTIVITIS DIAGNOSIS AND TREATMENT INCLUDE:

Seek medical advice if you have conjunctivitis symptoms – especially extra sensitivity to light, severe eye pain or blurred eyesight. Babies with conjunctivitis need urgent medical care.

It is important for a health professional to work out which kind of conjunctivitis it is so the right treatment can be given, when necessary, to clear up the discomfort and avoid possible complications.

Managing Stress In the Work Place

Work place stress is a common phenomenon and it is taking it’s toll on lives daily with devastating effects and no one is immune to it. Anyone who is working or has ever held a job, would at some point, felt the pressure of work-related stress. Any job can have stressful elements, even if you love what you do so much. In the short-term, you may experience pressure to meet a deadline or to fulfill a challenging obligation. But when work stress becomes chronic, it can be overwhelming and harmful to both physical and emotional health.

A 2017 survey carried out by Dr Olabode Shabi, Chairman of the Society of Family Physicians of Nigeria, (SFPN) Ekiti Zone, has said that over seven million Nigerians currently suffer stress and depression.

The News Agency of Nigeria, (NAN) reports that the medical consultant made this disclosure at Ado Ekiti in a ceremony organized by the Information Chapel of the state council of the Nigeria Union of Journalists (NUJ) recently.

In a paper titled “’Stress and Depression in Workplace: Strategic approach to management’’ he described stress as an exaggeration of normal physical response to events and life challenges that makes a person feel threatened or upset in some ways.

He added that depression was a common mental health problem that affect 29 million persons in Africa, out of an estimated 322 million people currently affected worldwide. This claim is corroborated by the American Psychological Association’s (APA) annual Stress in America Survey report of 2017 shows over 78 Percent are stressed out this was captured in the APA 10Th Edition Publication, Stress in America.

  • Establish boundaries. In today’s digital world, it’s easy to feel pressure to be available 24 hours a day. Establish some work-life boundaries for yourself. That might mean making a rule not to check email from home in the evening, or not answering the phone during dinner. Although people have different preferences when it comes to how much they blend their work and home life, creating some clear boundaries between these realms can reduce the potential for work-life conflict and the stress that goes with it.
  • Take time to recharge. To avoid the negative effects of chronic stress and burnout, we need time to replenish and return to our pre-stress level of functioning. This recovery process requires “switching off” from work by having periods of time when you are neither engaging in work-related activities, nor thinking about work. That’s why it’s critical that you disconnect from time to time, in a way that fits your needs and preferences. Don’t let your vacation days go to waste. When possible, take time off to relax and unwind, so you come back to work feeling reinvigorated and ready to perform at your best.   • Learn how to relax. The skill of being able to focus purposefully on a single activity without distraction will get stronger with practice and you’ll find that you can apply it to many different aspects of your life.
  • Talk to your supervisor or Boss. Healthy employees are typically more productive, so your boss has an incentive to create a work environment that promotes employee well-being. Start by having an open conversation with your supervisor. The purpose of this isn’t to lay out a list of complaints, but rather to come up with an effective plan for managing the stressors you’ve identified, so you can perform at your best on the job. While some parts of the plan may be designed to help you improve your skills in areas such as time management, other elements might include identifying employer-sponsored wellness resources you can tap into, clarifying what’s expected of you, getting necessary resources or support from colleagues, enriching your job to include more challenging or meaningful tasks, or making changes to your physical workspace to make it more comfortable and reduce strain.
  • Get some support. Accepting help from trusted friends and family members can improve your ability to manage stress. Your employer may also have stress management resources available through an employee assistance program (EAP) or Staff Welfare Program, including online information, available counseling and referral to mental health professionals, if needed. Long distant relationships come with their own unique challenges. It’s hard, I agree, but there are people who are making it work. To have a healthy long distant relationship, there must be a close and constant communication. Nowadays it’s a lot easier than it used to be. Now we have Skype, computers, tablets and smart phones.

I tell people that long distant relationship is not for everybody. It works for some people and don’t work for others. For me, I like long distant relationship. I love space, I love seeing my man once in a while. My love for him grows when I miss him so much. Absence they say makes the heart grow funder.  For others they love to see their partners every day. They feel they are giving room for infidelity if they don’t see often. Whatever works for you, go for it.

What kills long distance relationships is lack of communication. Take the time to figure out how and when is best to communicate with each other, especially video calls. Work at making each other feel special, even without seeing each other. Be open, honest, and trusting.  Just because you’re apart doesn’t mean that you’ve lost your need for intimacy and self-esteem, so take every opportunity to make each other feel good and encourage each other.
