Today on our Food and Recipes, we are going to be teaching our readers how to make delicious porridge yam.
Porridge yam is a Nigerian delicacy and basically every Nigerian love eating it. It can be cooked with dry fish,smoked fish or iced fish.Most people love to add green leaves like pumpkin or moringa to make it more nutritious while some may prefer to conclude the cooking with just palm oil. Porridge yam can be made with dry beef or chicken. But we are going to be showing our readers how you can make it using smoked fish.
INGREDIENTS
1 kg (2.2 lbs) white yam
Red palm Oil (to colour)
1 smoked fish (mackerel)
1 tablespoon ground crayfish
Fresh green vegetable (eg pumpkin, parsley, scent leaf or green amaranth)
Fresh Pepper & Salt (to taste)
2 big stock cubes
PREPARATION
1.Peel and cut the yam tuber into medium sizes. Wash the yam cubes and place in a sizeable pot.
2.Wash and grind or blend the fresh pepper. Set these aside.
3.If using dry fish, soak and pick the bones.
4.Add enough water to cover the yam cubes and start cooking at medium to high heat. If you are using dry fish, add it now.
5.When the yams have got a good boil, add the ground crayfish, pepper, stock cubes, palm oil and the smoked fish(if that is what you are using).
6.Cover the pot and continue cooking till the yam is done.
7.Add salt to taste and stir very well. Cook at high heat for about 5 minutes.
8.Add the green vegetable, stir and leave to stand for about 3
minutes then serve.
